According to the changelog, the update introduces a handful of new nodes, a new Grease Pencil workflow, enhancements to the animation system, and more. Blender 5.1 will remain in beta until March 11, 2026, as outlined in the release schedule.

The Blender Foundation has previously released the first corrective update for Blender 5.0, fixing 132 issues, worth checking out if you missed it.
